Tasty pasta for diabetes, gluten allergies or just trying to lose weight

I love pasta, in fact I love all carbohydrates.  About 2 years ago I was diagnosed with diabetes and since then I have found it difficult to find satisfying, low calorie, healthy foods. When my doctor told me that I had to cut down on carbohydrates and lose weight i went on a search to find new ways to enjoy my meals and cook my favorite recipes. I have tried many different recipes and foods from different countries- some good and some not so good.  Recently I have discovered Skinny Pasta.  It  is made from the Konjac plant from china, it contains something call "Glocumnan" which allows it to absorb liquids up till 200x its size.  It is not new, in fact in the far east these noodles have been a common part of their diet.  In China it is known as JOYO or  MOYO  and in Japan it is know as SHIRATKI or  KONIAKO.  All I can say is its good, and easy to make.  More importantly it is healthy, fat free, gluten free,and cholesterol free. I have been able to substitute them in for all of my pasta recipes.  Just cook them in whatever sauce you  are making and it absorbs the tastes.  Here is a recipe that I found and have been eating. I hope you like and that if you are like me, a person who loves to eat but has been told to make it healthier, you will be able to enjoy some of your favorite foods again.
Toasted Eggplant Spaghetti with Tomato and Olives

Ingredients:
1 pack SkinnyPasta
200 grams eggplant, cut into small cubes
400 grams crushed tomato
1 garlic clove, chopped
1/2 red onion, sliced
1 tablespoon olive oil
1 olive oil spray
1/4 cup of water
Directions:
Spray a cooking dish with olive oil. Put the eggplants on the dish and bake in 180°c(356° f) for 5-8 minutes. Follow the instructions and cook the SkinnyPasta. In a pan, add olive oil and fry the garlic, then add the onion. Add the tomato and the water and let it boil. When boiling, cook on back burner and add the eggplant. Cook until the sauce is thick and add the olives and the SkinnyPasta. Toss and stir so the sauce will cover the pasta.
The most important thing- I have lost weight Skinny Pasta only has 9 calories -less than what your body needs to digest- so you can eat a lot!!!

Mediterranean Diet: Watermelon Can Lower Your High Blood Pressure

According to the Journal of the American Medical Association, reducing recent research sodium intake has a limited effect in lowering high blood pressure and a minimal effect on people with normal blood pressure. However, in the United States is finding out that a moderate sodium intake combined with a higher intake of potassium, calcium and magnesium, minerals that are found in fruit, vegetables and low-fat dairy products, offers more significant benefits for reducing high blood pressure than just restricting sodium intake. These four minerals, sodium, potassium, calcium and magnesium work together to regulate blood pressure.
And now, researchers from USDA Agricultural Research Service, Texas A&M University, University of Nevada, and Oklahoma State University, have reported that the levels of arginine in the blood increased by 22 per cent after three weeks of drinking watermelon juice with every meal. Arginine is a substance needed to produce nitric oxide, which has been shown to lower blood pressure, reduce blood clotting and protect against myocardial infarction and strokes.
The study included 23 volunteers who received 1560 grams of watermelon juice per day. Julie Collins, the lead author of the study, reports that the volunteers showed that fasting blood levels of arginine had increased by 22 per cent in three weeks. "Because the watermelon juice intervention was not continued longer than three weeks, it is not known if arginine levels will have remained stable at three weeks or if there would have been further increases with prolonged administration," stated the researchers.

The name of this fruit, watermelon, gives us a clear idea of what it is made of. Watermelon is, of all fruits, the one that contains the largest percentage of water, 93%. In fact, two large slices of watermelon are equivalent to one glass of water. Choosing a watermelon at the market
